Delicious Breadfruit Tacos with Ackee and Saltfish

“A recipe has no soul. You, as the cook, must bring soul to the recipe.”

– Thomas Keller

I am a firm believer that food should be not only delicious but fills the soul. Breadfruit is a large round starchy fruit of a tropical tree, which is used as a vegetable and sometimes to make a substitute for flour. In some cases, it is considered a fruit due to it’s nutritional properties.

It can be roasted or fried and not eaten raw like the way Christina Millan did in that one video.

Because of it’s diversity, the possibilities are endless as it relates to the preparation options. I recently came across a recipe where the Breadfruit can be used as Tacos then paired with the Jamaican national dish of Ackee and Saltfish and not only was I mind-blown but I knew I had to try this for myself.

Delicious Breadfruit Tacos with Ackee and Saltfish

Ingredients

  • 1 Breadfruit
  • Ackee (canned or raw from the tree)
  • Salffish a.k.a Codfish (canned)
  • Toothpicks
  • 1/4 Bell Pepper
  • 1/4 Scotch Bonnet Pepper
  • 1/4 Onion
  • Black Pepper
  • Salt
  • All Purpose Seasoning
  • Cooking Oil of your choice

Ingredients

  1. Roast Breadfruit on the stove or on open fire outdoor for 30 – 40 minutes. There are other recipes that say “boil”, but as a person from the Caribbean I do not recommend this as it will alter the texture and taste. If you live in the Caribbean or Caribbean Diaspora, there are stores and vendors who you can purchase the Breadfruit from already roasted.
  2. After roasting breadfruit, slice from the top or based of the fruit into thinly sliced “rounds”. They should pretty much look like discs.
  3. Dice Onions, Scotch Bonnet Pepper and Bell Peppers into your desired size and set aside.
  4. In a Medium size frying pan over medium heat, add breadfruit rounds and fry on both sides until they start to change colour and size.  When the heat touches them, you will notice they start to shrink and form a “C” shape as if they are touching each other. This is the desired Taco shape you want and you can remove from frying pan. Do not fry too crisp as they will start to break.
  5. Remove Breadfruit “rounds” from heat and use the toothpicks to sort of pin them together towards the middle so they told the “Taco shell shape”
  6. In the same Frying pan, turn to low heat and add Diced Onions, Scotch Bonnet Pepper and Bell Peppers you set aside and cook for 40 seconds.
  7. Add Ackee and Saltfish to the mixture and add salt, pepper and all-purpose seasoning to you taste.
  8. Fill the Tacos with the Ackee and Saltfish and serve!
